Banana Ice Cream & Chewy "Candy"
It's a toasty day. All I want is ice cream!!
What's better than healthy Banana Ice Cream with guilt free chewy "candy"??? It's so delicious, rich and creamy and a little twist of tanginess from freeze dried raspberry. Oh yumh!!
Recipe:
2-3 frozen bananas
1/2-3/4 c nut milk (more or less, depends on your desired consistency)
2 pitted dates
a handful of freeze dried raspberries
1/2 tsp vanilla extract (optional)
1 tbsp coconut oil (optional)
Blend all ingredients, except dates and freeze dried raspberries, in a high speed blender until smooth. Then add dates and blend for another 10 seconds. Crumble freeze dried raspberries on the ice cream and stir with a spoon a few times before serving.

Note: Make sure you use overripe bananas and don't forget to peel bananas before freezing (believe me there are a bunch of folk out there don't peel bananas before freezing). I prefer to add dates at the end and blend for another 10 seconds to get chunky chewy texture just like chewy candy, instead of adding at the beginning. Same thing for freeze dried raspberries, I crumble them on ice cream right before serving to get good kick of tanginess bite of bite. If you add it in the beginning, you will lose the good kick of tanginess and that little puffy texture. Also I LOVE adding coconut oil to some of smoothies for health benefits.
